Southwestern Chicken Salad Wraps

 

Lunch on the go can be difficult, but this recipe is a great one to make ahead and take with you! It’s delicious and filling – perfect for a busy day!

Ingredients

  • 1 cooked chicken breast, shredded (click this link learn how I cook chicken for shredding, opens in a new tab)
  • 1/2 cup light sour cream
  • 1/4 cup chunky salsa
  • 1 avocado, cut into chunks
  • 1 tbsp chopped fresh cilantro
  • 1 tsp fresh lime juice
  • 4 outer leaves of romaine lettuce

Directions

Combine all ingredients except lettuce in medium size bowl. Spoon mixture evenly onto romaine lettuce leaves. Roll up and enjoy!

Recipe serves 2 people with 371 calories, 20g fat, 15g carbs, and 33g protein per serving.
