Banana Nut Oatmeal Cookies

These cookies have become a favorite sweet treat for me. They taste like banana nut bread, and they have a great chew to them. I really feel like I’m eating something bigger even when I have only one cookie. The best part is that each cookie is only about 68 calories!  With the fiber from the oats and healthy fats from the nuts, this treat is a dessert I can have when I’m counting calories.  To avoid the artificial sweetener, simply omit the Splenda brown sugar blend and double the honey.

Banana Nut Cookies

Ingredients

  • 3 medium ripe bananas
  • ½ cup natural applesauce
  • 2 cups quick cooking oats
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ cup chopped walnuts
  • 2 tbsp honey
  • 2 tbsp Splenda brown sugar blend

 

Directions

Preheat oven to 350. Line cookie sheet with parchment paper.

Mash bananas, then stir in all other ingredients except the oats. Add the oats last and stir just until well blended.

Drop mixture onto cookie sheet, dividing into 20 equal pieces. Lightly press each to flatten slightly.

Bake for 16-20 minutes or until golden brown.

 

Recipes makes 20 cookies with 68 calories, 13g carbs, 2g fat, and 1g protein per cookie.
