Italian Zucchini Skillet

 

If you’re avoiding pasta but CRAVING Italian food, then you need to try this one-dish meal! This is a family favorite in our house. We like to top it with parmesan cheese (but note that the cheese is not included in the calorie count below).

Italian Zucchini Skillet

Ingredients

  • 16oz lean ground turkey
  • 1 tbsp extra virgin olive oil
  • 2 cans petite diced tomatoes (or 3 large fresh tomatoes diced small)
  • 2 tsp dried basil
  • 2 tsp garlic powder
  • 2 tsp dried oregano
  • 1/4 tsp ground black pepper
  • 1/2 tsp salt
  • 1 medium onion, chopped small
  • 2 medium zucchini, sliced into bite size piece OR grated into noodles
  • 3 tbsp tomato paste

Directions

Add olive oil, onion and zucchini to large skillet and cook on medium heat until onion and zucchini are soft (about 10-12 minutes). Add turkey and continue cooking mixture until no longer pink, breaking up the ground turkey into small pieces. Add tomatoes, tomato paste, and seasonings.  Simmer over medium heat for 10-12 minutes. Serve hot.

Recipe makes 4 servings with 288 calories, 12g fat, 21g carbs and 25g protein per serving. It’s a hearty serving size, too!
