Salsa Chicken

 

This is dish is packed with flavor but NOT calories!! Everyone in my family loves this dinner recipe, and it has become a favorite that we eat at least once every couple of weeks. The hardest part is cutting up the vegetables, but the flavor of the finished dish makes it worth the effort!

Salsa Chicken

Ingredients

  • 1 lb chicken breasts, cut into bite size pieces
  • 1 cup onion, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup celery, chopped
  • 1 tbsp olive oil
  • 1 packet taco seasoning mix (low sodium variety)
  • 2 cups fresh tomatoes, diced (OR 1 can petite diced tomatoes)
  • 1 cup medium chunky salsa

Directions

Add olive oil to large skillet over medium heat. Add onion, carrots, and celery and cook, stirring frequently, until near desired tenderness (we like them soft, not crunchy). Add chicken and continue cooking & stirring until no longer pink. Add taco seasoning, tomatoes and salsa. After the mixture starts to bubble, simmer for 15 minutes. Serve hot. It’s great topped with light sour cream and green onions (as pictured). My girls like to eat it with tortilla chips, scooping up bites of the salsa chicken with each chip.

Recipe makes 4 servings and has 244 calories, 5g fat, 22g carbs, and 27g protein per serving (numbers do NOT include toppings or tortilla chips).
