Applesauce Oatmeal Muffins

 

This recipe is a delicious way to make whole-grain and totally delicious muffins. The best part is that these homemade muffins are clean – no preservatives or chemicals added to keep the “bread” fresh. If you’re trying to “eat clean,” these muffins would make a great breakfast or sweet snack. If you’re just counting calories, you’ll still want this recipe – the muffins are under 100 calories each!

Applesauce Oatmeal Muffins

Ingredients – Muffins

    • 1 cup old fashioned oats (NOT quick or instant oatmeal!)
    • 1 cup 1% milk
    • 1/2 cup brown sugar
    • 1/2 cup natural unsweetened applesauce
    • 2 egg whites
    • 1 cup whole wheat flour
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp cinnamon

Ingredients – Topping

  • 1 tsp cinnamon
  • 1 tsp sugar
  • Optional add-ins: nuts or raisins (I prefer walnuts)

Directions

Combine oats with milk and allow to soak for one hour.

Preheat oven to 400. Spray muffin pan with non-stick cooking spray.

Combine the oat-milk mixture with the brown sugar, egg whites and applesauce. In a separate bowl, whisk together the flour, baking soda, salt and cinnamon. Add wet ingredients to the dry mix and mix just until combined. Fold in nuts or raisins, if desired. Be careful to not over mix the batter or the muffins will be tough. Spoon mixture into muffin pan, dividing equally into 12 muffins.

Combine the cinnamon and sugar for the topping. Sprinkle a little of the mixture on the top of each muffin.

Bake for 20-25 minutes or until toothpick inserted in center comes out clean. Cool five minutes in pan, then remove muffins from the pan. Serve warm or at room temperature.

These muffins can be frozen then reheated in microwave for a quick breakfast or snack. Because these muffins do not have preservatives, you’ll want to eat or freeze them within three days.

This recipe makes 12 servings with 93 calories, 1g fat, 24g carbs and 3g protein per serving without optional add-ins.
