Winter White Bean Soup

 

When the weather outside is frightful, nothing is more comforting that a hot bowl of soup. My family recently tried this recipe on one of the first cold nights of this winter, and we all agreed this is one we’ll make again! The soup is hearty and filling and, most importantly, very tasty!

Ingredients

  • 2 tsp extra virgin olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb turkey Italian sausage
  • 2 cans white beans (Great Northern or Cannellini beans), rinsed and drained
  • 1 tsp dried basil
  • 1 can petite diced tomatoes
  • 4 cups low sodium chicken stock or broth
  • 1 10 oz pkg baby spinach, fresh or frozen
  • 1 tbsp Parmesan cheese

Directions

Slice turkey sausages in half, length wise. Remove skin, and cut the sausage halves into bite size pieces. In a stock pot over medium heat, sauté onion in olive oil until pieces begin to turn translucent. Add garlic and sauté one minute. Drop turkey sausage pieces into pot one by one. Cook, stirring occasionally, until meat is cooked through. Add the beans, basil, tomatoes, and stock or broth. Turn heat up to high and bring to a boil. Reduce heat to medium-low and simmer for 20 minutes. Add spinach and stir into soup. Simmer 5 minutes more. Serve hot topped with Parmesan cheese.

Recipe makes 6 hearty servings with 335 calories, 29g protein, 29g carbs, and 11g fat per serving.
